The General's hot sauce contains 86% actual peppers, while the industry standard is only 20%. A lot of what they do is manual, old-school work. It's decidedly inefficient, but it's worth it.

 

Grunt Green Hot Sauce:

The General discovered almost by accident that green cayenne peppers picked just before they turn red can bring a truly unique, tangy, earthy flavour. Grunt Green still carries the same fresh flavour as Dead Red, and that same rich concentration of all-natural cayenne peppers.

Much of the harvesting of the green peppers happens at the end of a growing season, when these mature, perfectly balanced (but somewhat stubborn) peppers just decide to stay green; as such, The General usually ages these peppers a bit longer. A “late heat” that won’t jump out at you right away, very popular at the breakfast table, the perfect balance of flavour and heat.

Heat Level: According to The General, this sauce brings a solid heat of 5-6 out of 10. However, some vintages run a touch hotter during hot, dry summers.

Ingredients: Louisiana Cayenne Peppers, Distilled White Vinegar, Salt, Garlic.

 

Dead Red Hot Sauce:

The General’s Dead Red Hot Sauce is The General’s classic signature product. Perfect for buffalo wings, but great on pretty much everything else. Made from Louisiana-grown, fully ripe red cayenne peppers hand-picked at exactly the right time, and then salted down and aged until the mash is perfect for conversion and bottling.

An all-natural product that is almost 90% cayenne peppers, this sauce packs a truly authentic, fresh cayenne flavour that will be very different when compared to other sauces that typically have a stronger concentration of vinegar.

Cut it with some butter to make wings (The General suggests 75% sauce and 25% butter).

This sauce won’t melt your brain, but depending upon your palate, you may need to reach for a cold beverage.

Danger Close Hot Sauce:

The General’s newest flavour, Danger Close is a magical blend of red cayenne and orange habanero peppers. The General thinks it’s the PERFECT sauce for making buffalo wings – it packs a strong cayenne flavour, but also brings a solid backdoor kicker of habanero heat. More heat than their best-seller, Dead Red, but it won’t melt your brain like a heavy dose of Shock & Awe.

Each bottle of the General’s Hot Sauce is all-natural, and contains 86% actual peppers; most other sauces are 20% at best.

Shock & Awe Hot Sauce:

Not for the faint of heart, this sauce was a special request from The General’s beloved heat freak fans that he has since opened up to the rest of the universe.

Made with almost 90% Louisiana-grown orange habaneros (The General liked that flavour the best from all his testing), you’ll get a unique punch of deep, powerful, sustained heat that is offset by a sweet aroma and taste. Many of The General’s fans use this sauce to “spike” Dead Red when making wings.

Heat Level: it checks in around an 8.5-9 on a 10 point scale, according to most folks.

So as not to distract from that sweet-heat combination, The General added a touch less salt so that the true flavour of the habanero pepper really pops in the sauce. You can set your watch by the habanero pepper — it delivers a fairly consistent heat and flavour even in varying conditions.

Bee Sting: Carolina Reaper Infused Honey

After aging their American grown Carolina Reaper mash, the good people at The General’s Hot Sauce sun dry the leftover solids in their drying beds. This naturally dries and preserves its intense heat and bold flavour. They then add the sun-dried Carolina Reaper powder to fresh batches of American-sourced premium honey, creating The General’s Bee Sting.

Whether you’re drizzling it on your wings, pizza crusts, or just about anything that craves some sweet-heat, Bee Sting is a perfectly balanced combination of decadence and fiery flavour.

Ingredients: American-Sourced Honey, Sun-Dried Carolina Reaper Pepper Mash, Distilled White Vinegar.

 

Maple Mayhem: Hot Maple Syrup

This all-natural, habanero-infused maple syrup, the perfect balance of sweet and heat, is made from the highest quality ingredients.

Vermont’s maple trees provide the sweet, and The General’s lightly salted, sun-dried ground habanero pepper mash provides the heat. Perfect for maple-glazed salmon, chicken and waffles, grilled brussel sprouts, or caramelized pork chops.
